It used to be that I needed to wait a year to have a poutine while visiting my family in Canada. When I learned that Walrus + Carpenter had poutine, I was hesitate to try it. I was worried that it would not stand up to my high exceptions. Turns out, it was amazing. The gravy was as my dad would say “roll on the floor” worthy. Although the cheese did not “squeak” like the Canadian cheese curds, the use of mozzarella was a great move. The cheese was perfectly melted and was evenly distributed over the fries. #canadianapproved.
